In this cheese factory, between December and July, the hands of D. Maria do Rosário produce about 30 cheeses daily, following the artisan practices.
The milk comes from the milking of a herd of a hundred goats, and there is only milk when the kids are born!
The hay, scrub and herbs from the fields of the village of Quebrada feed the herd of one hundred charnequeiras and crossbreeds of other breeds and transmit all the intensity and flavor to this cheese.
This well-made one began in 1989.
